FISH FARM AMONG THE HILLS OF DOLENJSKA REGION

Preparation of freshwater fish for food, a less-known part of Slovenian cuisine, is unfortunately, dying. Sadly, many of us - passionate fishermen are an exception – do not know much about the trout. To help popularize the Slovenian cuisine and local dishes we visited a chef Robert Gregorčič from Dolenjska region with the OKUSI BREZ MEJA show (eng.: Flavours without borders) - link. The chief's love for the culinary art is based on a traditional, sometimes nearly forgotten recipes, but supplemented by an addition of modern makeover. A very special place in this culinary experience occupy freshwater fishes, bred by his friend Dominik Goričar from Slivje – Podbočje, working in the company of the chef's family.
